8 fl oz corn oil
8oz castor sugar
3 large eggs
6oz plain flour
1 1⁄2 level teaspoons baking powder 1 1⁄2 level teaspoons bicarb soda
3⁄4 teaspoon salt
1 1⁄2 teaspoons ground cinnamon 4oz chopped walnuts
2oz chopped dates
8oz grated carrot
1 teaspoon vanilla essence

8oz sifted icing sugar
Grease 8 inch round deep cake tin, line base with greaseproof paper. Beat oil and sugar together, add eggs one at a time, beat after each addition. Sift flour, baking powder, bicarb of soda, salt and cinnamon. Sift into mixture. Beat well and then add chopped walnuts, carrots, dates and vanilla. Pour into tin and bake for 1hour 170*c. Cool in tin.
Beat cream cheese and butter until blended and gradually add icing sugar. Cover top and sides with the frosting and chill.
